It’s wonderful to be back in Tønsåsen. The dark season has just started so the days are still lit up by pink clouds, like a sunset just after the sun has disappeared below the horizon. There is a 15cm layer of snow, crisp and white as the temperature lies at about minus 6 degrees Celsius. To celebrate my return and the changing of seasons, I’ve indulged in a mørketidsbolle – a ”dark season bun”. Filled with custard and topped with chocolate, it tastes almost exactly like one of my childhood favourite treats, available from the local baker all year around (we had no dark season). There is one difference, however. If you look carefully at the photograph, you can see the pink-blue mørketid sky reflected in the chocolate. Only arctic bakers can do that...

Mørketidsbolle
